Laos is South-East Asia's most-relaxed and least-touristed country — a landlocked, mountainous, Buddhist nation of 7 million people that has retained the slowness of pre-tourism South-East Asia in a way that Thailand and Vietnam haven't. Lao is the language (Tai-Kadai family, closely related to Thai); French is occasionally heard among older generations from the colonial period; English in tourism areas. The food: laap (the Lao national dish — minced-meat salad with herbs and roasted-rice powder), tam mak hung (the spicy green-papaya salad), khao soi (Lao version is different from the Thai), sticky rice eaten with hands at every meal, plus excellent BeerLao (the country's national lager).
